This flavoured salt is a perfect seasoning for meat, fish or chicken before roasting, barbequing or grilling. Can also be sprinkled onto stews and casseroles to add a depth of flavour.

Ingredients

Ground coriander

4 tsp, seeds (1 tbs)

Ground cumin

1 tbs, (seeds)

Salt

2 cup(s), 200g - Use Pink Sea Salt flakes

Ground sumac

3 tbs, (1/4 cup)

Dried coriander

2 tbs, leaves

Garlic powder or flakes

1 tbs

Dried chilli flakes

1 tbs

Instructions

  1. Heat a frying pan over medium heat. Cook the coriander and cumin seeds, stirring, for 1 minute or until lightly toasted. Place in a mortar and lightly pound with a pestle. Combine the seeds and remaining ingredients in a medium bowl. Spoon into jars and seal. Store in a cool, dry place.

Notes

Serve as a seasoning for tagines, couscous and Middle Eastern casseroles. You can also sprinkle it over meat, fish or chicken before roasting, grilling or barbecuing, too.
