Ingredients

Reduced fat oil spread

80 g, melted

Fresh lemon rind

1½ tsp, finely grated

Egg(s)

2 medium, separated

Granulated stevia sweetener

1 cup(s)

White self-raising flour

cup(s), (50g)

Lemon juice

2 tbs

Skim milk

¾ cup(s), (185ml)

Oil spray

1 x 3 second spray(s)

Instructions

  1. Preheat oven to 180°C or 160°C fan-forced. Lightly spray a 3½-cup (875ml) capacity (17cm x 24cm) ovenproof dish with oil.
  2. Whisk spread, rind and egg yolks in a large bowl until combined. Stir in sweetener, flour and juice until combined. Gradually stir in milk until smooth and combined (mixture will be runny).
  3. Using electric beaters, beat egg whites in a clean, dry bowl until soft peaks form. Gently fold egg whites into lemon mixture. Pour mixture into prepared dish.
  4. Place dish in a large baking dish. Pour enough boiling water into dish to come halfway up the sides of smaller dish. Bake for 20–25 minutes or until light golden and just set. Remove dish from oven and water bath. Set aside to cool for 5 minutes. Serve.

Notes

SERVING SUGGESTION: Add strawberries to serve.TIP: Be careful not to overcook the pudding or it won’t be as soft and fluffy. Store any leftovers in an airtight container in the fridge for up to 2 days. Reheat in the microwave. VARIATION: Swap lemon for lime.
