Ingredients

Fresh ginger

1 tsp, finely grated

Curry powder

½ tsp

Ground turmeric

½ tsp

Ground cumin

½ tsp

Fresh lemon rind

1 tsp, finely grated

Skinless white fish, raw

600 g, fillets, firm, cut into 4cm pieces

Orange(s)

1 medium, thinly sliced

Instructions

  1. Place ginger, curry powder, spices, rind and fish in a large bowl. Season with salt and pepper and toss gently to coat. Thread fish onto 4 skewers (see tip).
  2. Preheat a hooded barbecue over medium-high heat. Turn off burners under grill side (leaving flat plate side on). Place orange slices side by side on grill side. Top with skewers. Cook, with hood down using indirect heat, for 10-12 minutes or until cooked through. Serve.

Notes

If using bamboo skewers, soak in cold water for 10 minutes before threading fish.
