Chicken and noodle stir-fry that’s sure to become a weeknight staple!

Ingredients

Sunflower oil

1 tbs, or canola oil

Chicken breast mince

400 g

Red capsicum

1 medium, thinly sliced

Fresh hokkien noodles

440 g

Pak choy

1 bunch(es), thinly sliced

Green shallot(s)

3 individual, white ends thinly sliced, green tops reserved

Chilli and garlic sauce

1 tbs

Soy sauce

2 tbs, dark variety

Hoisin sauce

60 ml, (¼ cup)

Chinese rice wine

1½ tbs

Bean sprouts

100 g, to serve

Instructions

  1. Heat oil in a wok or large frying pan over high heat. Stir-fry mince, breaking up lumps, for 5-7 minutes or until browned. Add capsicum and stir-fry for 5 minutes or until softened.
  2. Meanwhile, prepare noodles following packet instructions or until just tender. Rinse under cold water. Drain.
  3. Add pak choy, white ends of shallot, sauces, rice wine and noodles to pan. Stir-fry for 3 minutes or until heated through. Stir in sprouts. Serve topped with green ends of shallot.

Notes

TIP: Add hoisin to taste. You may only need 2 tablespoons as the strength of the sauce depends on the brand used. Chilli garlic sauce can be found in the Asian section of major supermarkets.
