Grilled ripe mangoes are caramelised to perfection, offering a smoky-sweet taste. They're then topped with a refreshing raspberry granita made from frozen raspberries, a touch of icing sugar, and ice cubes, adding a burst of fruity flavour. Finished with fresh mint, this dessert is a delightful balance of textures and tastes, easy to make and sure to please at any BBQ summer gathering!

Ingredients

Mango

4 small

Frozen raspberries

½ cup(s), (75g)

Ice cubes

½ cup(s)

Icing sugar

1 tbs

Fresh mint

1 tbs, sprigs to serve

Instructions

  1. Heat a barbecue or chargrill on high. Cut the cheeks from the mangoes and score the flesh in a criss-cross pattern, without cutting all the way through the skin. Grill the cheeks, cut-side down, for 3-5 minutes or until lightly charred.
  2. Meanwhile, place the raspberries, ice-cubes and sugar in a small food processor or blender and process until finely chopped and well combined.
  3. Top the grilled side of each mango cheek with raspberry granita and a mint sprig. Serve immediately.
