Citrus fruit salad with ginger and honey syrup

Celebrate the wonderful flavours and colours that come from citrus fruits like ruby red grapefruit, mandarins, oranges and limes.

Ingredients

Honey

2 tbs

Fresh ginger

2 tbs, (3cm piece) cut into matchsticks

Granulated stevia sweetener

1 tbs

Lime(s)

1 medium, peeled, thinly sliced

Grapefruit

2 whole, rudy red, peeled, thinly sliced

Mandarin

2 medium, peeled, thinly sliced

Orange(s)

2 small, peeled, thinly sliced

Fresh mint

2 tbs

Instructions

  1. Place honey, ginger, stevia and ¼ cup (60ml) water in a small saucepan over medium-high heat. Bring to the boil. Reduce heat and simmer, uncovered, for 3 minutes or until stevia has dissolved and syrup thickens.
  2. Combine lime, grapefruit, mandarin and orange in a shallow dish. Pour over syrup. Cover and place in fridge for 1 hour or until chilled and flavours have infused. Serve topped with mint.

Notes

After peeling, use a small sharp knife to remove as much white pith as possible from the citrus. You can drizzle this syrup over any combination of fruit, such as rockmelon, honeydew or stone fruit.
