Grab a spoon and savour the rich chocolate taste of this gooey pudding. Best fresh from the oven.

Ingredients

Plain flour

1 cup(s), (150g)

Caster sugar

¼ cup(s), (55g)

Sweetener, xylitol

¼ cup(s), (55g)

Baking powder

2 tsp

Cocoa powder

½ cup(s), (45g)

Cocoa powder

2 tbs, extra for sauce

Cocoa powder

½ tsp, to serve

Egg(s)

1 medium, lightly beaten

Skim milk

150 ml

Reduced fat oil spread

30 g, melted and cooled

Vanilla bean extract

½ tsp

Brown sugar

2 tbs

Oil spray

1 x 3 second spray(s)

Instructions

  1. Preheat oven to 180°C. Lightly spray a 20cm baking dish with oil. In a large bowl, sift flour, caster sugar, xylitol, baking powder, cocoa powder and a pinch of salt. Whisk to combine.
  2. In a separate large bowl, whisk egg with milk, spread and vanilla. Fold wet ingredients into dry ingredients until combined. Pour mixture into baking dish.
  3. In a small jug, combine brown sugar with extra 2 tablespoons cocoa powder and sprinkle over pudding mixture. Carefully pour 300ml boiling water over the back of a spoon. Bake for 25-30 minutes or until top of pudding feels firm and springy. Dust with extra ½ teaspoon cocoa powder. Serve.

SERVING SUGGESTION: Make this extra special by serving it with fresh berries and a dollop of 99% fat-free plain yoghurt.
