Ingredients

Egg(s)

2 medium

Vegetable chips

80 g, chicken flavour, crushed (see tip)

Plain flour

¼ cup(s), (40g)

Skinless chicken breast

500 g

Mango

2 large, chopped

Red capsicum

½ medium, finely chopped

Red onion

¼ medium, finely chopped

Lime juice

1 tbs

Fresh mint

¼ cup(s)

Instructions

  1. Preheat oven to 200°C. Line a baking tray with baking paper.
  2. Whisk eggs and 2 tablespoons water in a shallow bowl. Place crushed chips on a plate. Place flour on a second plate. Working with 1 piece at a time, coat chicken in flour, then egg mixture and chips. Place chicken on prepared tray. Bake for 20-25 minutes, turning halfway through cooking time, or until chicken is golden and cooked through.
  3. Meanwhile, combine mango, capsicum, onion, juice and mint in a medium bowl. Season salsa with salt and pepper. Serve chicken with mango salsa.

Notes

Serving suggestion: salad of mixed leaves, sliced cucumber and cherry tomatoes. Tip: To crush the chips, slightly open the bag and gently tap them with your fist. Variation: Add 1 small red chilli (finely chopped) in Step 3 or swap mint for ¼ cup fresh coriander.
