Irresistible teriyaki chicken tenders will be a certain crowd pleaser.

Ingredients

Chicken tenderloin

450 g, (12 pieces)

Teriyaki sauce

¼ cup(s), (60ml)

Broccoli

400 g, florets, finely chopped

Carrot(s)

1 medium, grated

Red cabbage

1½ cup(s), (120g), finely shredded

Buttermilk

¼ cup(s), (60ml)

Dry soba noodles (100% buckwheat)

190 g

Oil spray

1 x 3 second spray(s)

Instructions

  1. Combine chicken and teriyaki sauce in a bowl. Set aside for 5 minutes. Combine broccoli, carrot, cabbage and buttermilk in a bowl.
  2. Bring a medium saucepan of water to the boil. Cook noodles for 4 minutes or until tender. Drain.
  3. Thread chicken onto 12 small wooden skewers. Heat a barbecue grill or flat plate over medium heat. Lightly spray with oil. Cook chicken for 2 minutes each side or until golden and cooked through.
  4. Serve with broccoli slaw and noodles.

Notes

SERVING SUGGESTION: Lime wedges and sliced green shallot. TIP: Soak skewers in water for 10 minutes before cooking to prevent burning.
