Friand comes from the French word for ‘dainty’ and these pretty cakes studded with cherries certainly live up to their name.

Ingredients

Plain flour

1 cup(s), (150g)

Baking powder

1 tsp

Ground cinnamon

½ tsp

Almond meal

1 cup(s)

Icing sugar

cup(s)

Egg white

6 medium

Fruit puree, no added sugar (any fruit)

140 g, apple and pear

Reduced fat oil spread

80 g

Cherries

200 g

Instructions

  1. Preheat oven to 180°C or 160°C fan-forced. Lightly spray a 12-hole (⅓-cup/80ml capacity) muffin tin with oil.
  2. Sift the flour, baking powder and cinnamon into a large mixing bowl. Stir in almond meal and icing sugar. Whisk egg whites in a medium bowl until just combined. Add apple puree and melted spread to egg whites and stir to combine. Add egg white mixture to flour mixture and stir until just combined (do not over mix). Gently fold in cherries.
  3. Spoon mixture into prepared muffin holes. Bake for 18–20 minutes or until cooked when tested with a skewer. Stand friands in tin for 5 minutes before turning out onto a wire rack to cool. Serve.

Notes

You can use frozen blueberries or raspberries instead of cherries.
