Italian spiced Christmas biscuits (Cavallucci)

These Italian inspired Christmas cookies are famous in Tuscany. Made with plain flour and nuts, Cavallucci cookies make delicious homemade Christmas gifts.

Ingredients

Plain flour

2 cup(s), (300g)

Baking powder

1 tsp

Dried coriander

2½ tsp, ground

Ground cinnamon

1 tsp

Ground nutmeg

½ tsp

Fennel seeds

¼ tsp, finely chopped, lightly crushed

Sweetener, xylitol

¾ cup(s), (165g)

Walnuts

1 cup(s), (100g), chopped

Instructions

  1. Preheat oven to 160°C. Line 2 baking trays with baking paper. Combine flour, baking powder, coriander, cinnamon, nutmeg and fennel in a large bowl.
  2. Place xylitol and 100ml water in a small saucepan. Stir over medium heat for 2 minutes or until sweetener has dissolved. Stir in walnuts.
  3. Pour walnut mixture into flour mixture and stir until a dough forms. Roll tablespoons of dough into 20 balls. Place balls, 5cm apart, on prepared trays and flatten slightly. Bake for 15 minutes or until light golden. Cool on trays before serving.

Notes

TIPS: To lightly crush fennel seeds, place them on a board and gently press them with the side of a large knife. Add it: ½ tsp sifted icing sugar to dust. Swap it: Walnuts for almonds or pistachios.
