Bliss balls are perfect for a morning or afternoon pick-me-up. Store them in a reusable container in the fridge for up to 2 weeks or freeze for up to 2 months. Thaw at room temperature or pack frozen into a snack box and they‘ll thaw and be ready to eat in no time.

Ingredients

Fresh dates

12 individual, pitted

Rolled oats, dry

50 g

Pecans

50 g, roughly chopped

Carrot(s)

70 g, finely grated

Chia seeds

3 tsp

Ground ginger

1 tsp

Ground cinnamon

1 tsp

Vanilla bean extract, alcohol free

1 tsp

Shredded or desiccated coconut

cup(s), (25 g)

Instructions

  1. Place dates in a heatproof bowl. Cover with boiling water and set aside for 5 minutes to soften. Drain.
  2. Process dates, oats, pecans, carrot, chia seeds, ginger, cinnamon and vanilla in a food processor until well combined. Transfer mixture to a bowl, cover and refrigerate for 30 minutes.
  3. Place coconut in a shallow dish. Shape mixture into 25 balls and roll in coconut to coat.

Notes

Keep in an airtight container in the fridge for up to 2 week.
