Ingredients

Brown onion

1 medium, chopped

Vegetable stock

2½ cup(s), (625ml)

Butternut pumpkin

1 kg, peeled and cut into 3cm cubes

Red apple, peeled

1 medium, chopped

Ground nutmeg

tsp

Fresh chives

1 tbs, finely chopped

Oil spray

1 x 3 second spray(s)

Instructions

  1. Lightly spray a large deep saucepan with oil and heat over medium-high heat. Add onions and cook, stirring often for 5 minutes or until softened. Add stock, pumpkin and apple, cover and bring to the boil. Remove lid, reduce heat to low and simmer uncovered for a further 10 minutes or until pumpkin is tender.
  2. Use a stick blender to blend soup until smooth. Season with salt, pepper and nutmeg. Sprinkle with chives to serve.

Notes

TIP: To save on prep time, purchase already peeled and cubed pumpkin in the fresh produce section of major supermarkets.
