Ingredients

Shortcut bacon

45 g, (2 x 25g rashers), fat trimmed

Light rye bread

70 g, (2 x 35g slices)

Harissa

1 tsp

Iceberg lettuce

1 leaf, leaf

Tomato(es)

1 small, sliced

Cooked skinless chicken breast

70 g

Lemon juice

1 tbs

Oil spray

1 x 3 second spray(s)

Instructions

  1. Lightly spray a small non-stick frying pan with oil and heat over medium-high heat. Cook bacon, turning, for 5 minutes or until crisp.
  2. Toast bread and spread with harissa. Top one slice with lettuce, tomato, bacon and chicken. Season with salt and pepper and a squeeze of lemon juice. Top with remaining slice of toast and serve.
