Banana fritters with cinnamon ice-cream

Golden, crunchy banana topped with cinnamon ice-cream is a hit for the kids…and the kids at heart.

Ingredients

Ground cinnamon

½ tsp

Plain flour

2 tbs

Egg(s)

1 medium, lightly beaten

Skim milk

10 ml

Dried breadcrumbs

35 g, (1/2 cup panko breadcrumbs)

Brown sugar

1 tbs

Banana(s)

2 large, ripe, thickly sliced diagonally

Low fat, no added sugar ice cream

Instructions

  1. Preheat oven to 200°C or 180°C fan-forced. Combine ice-cream and cinnamon in a medium bowl. Place in a metal bowl. Freeze for 1 hour or until firm.
  2. Line a baking tray with baking paper. Place flour in a small bowl. Whisk egg and milk in a small bowl. Combine breadcrumbs and sugar in a small bowl.
  3. Working with 1 slice at a time, toss banana in flour to coat. Dip in egg mixture, then toss in breadcrumb mixture to lightly coat. Place on prepared tray. Lightly spray with oil and bake for 10 minutes or until fritters are golden.
  4. Serve fritters with a scoop of cinnamon ice-cream, sprinkled with extra cinnamon.
