This glaze pairs perfectly with ham, with its sweet and fruity depth of flavour creating a lip-lickin’ coating on your ham.

Ingredients

Apricot jam

½ cup(s), 100% Apricot spread

Port

¼ cup(s), 60ml

Freshly squeezed orange juice

¼ cup(s)

Whole grain mustard

1 tbs

Garlic

1 clove(s), Crushed

Fresh thyme

1 tbs, 2 Sprigs

Instructions

  1. Stir the fruit spread, fortified wine, orange juice, mustard, garlic and thyme in a small saucepan over medium heat until well combined.
  2. Simmer for 3 minutes or until the mixture thickens slightly. Discard the thyme. Season with pepper. Use to glaze a 6-8kg ham.
