If you love apple pie, you’ll be a firm fan of this easy cake that’s sweetened with honey and flavoured with warming mixed spice.

Ingredients

Honey

¼ cup(s), (90g), plus 1 tsp for brushing

99% fat-free, plain Greek yoghurt, unsweetened

75 g

White self-raising flour

1 cup(s), (200g)

Mixed spice

1 tsp

Red apple, unpeeled

2 large, cored, thinly sliced

Sultanas

50 g

Instructions

  1. Preheat oven to 160°C. Lightly spray a 20cm square (base measurement) cake tin with oil and line base and sides with baking paper, extending paper 2cm above the edge of tin.
  2. Whisk eggs, honey and yoghurt in a large bowl until combined. Sift flour and mixed spice over egg mixture, then fold in to form a smooth batter. Set aside about 15 apple slices. Stir the remaining apple slices and sultanas into batter.
  3. Pour batter into prepared tin and smooth the top with a spatula. Arrange reserved apple slices over top. Bake for 30-35 minutes, until golden brown and a skewer inserted into the centre of cake comes out clean.
  4. Brush the extra 1 teaspoon honey over hot cake. Stand in tin for 10 minutes, then turn out onto a wire rack to cool. Cut into 12 pieces.
