Tender apples baked in a crunchy oat and almond crust. Perfect with a scoop of creamy vanilla ice cream.

Ingredients

Rolled oats, dry

cup(s), (30g)

Plain flour

cup(s), (50g)

Caster sugar

2 tbs

Ground cinnamon

1 tsp

Reduced fat oil spread

50 g

Blanched almonds

¼ cup(s), (40g)

Apple, stewed, unsweetened

800 g

Vanilla ice cream

150 g

Oil spray

1 x 3 second spray(s)

Instructions

  1. Preheat oven to 200°C or 180°C fan-forced. Lightly spray a 3-cup (750ml) capacity baking dish with oil.
  2. Combine oats, flour, sugar and cinnamon in a large bowl. Using fingertips, rub in spread until mixture resembles coarse breadcrumbs. Stir in almonds.
  3. Place apple in prepared dish. Sprinkle with oat mixture and bake for 20–25 minutes or until golden. Serve with ice-cream.
  4. NOTE: You can use peaches or apricots in natural juice (drained) instead of apple.
