Ingredients

Banana(s)

1 medium, mashed

Fresh dates

1 individual, chopped

Mixed spice

½ tsp

Egg(s)

1 medium

Cocoa powder

1 tsp

Quick oats

cup(s), (30g)

Fresh raspberries

8 piece(s)

99% fat-free, plain or natural yoghurt, unsweetened

2 tbs

Milk chocolate chips

Instructions

  1. Combine banana, date, mixed spice, egg, cocoa powder and oats in a small bowl.
  2. Rinse a microwave-safe mug out with boiling water to prevent muffin from sticking. Spoon mixture into prepared mug and microwave on High (100%) for 90 seconds or until muffin starts to come away from the sides of the mug and is just firm to touch (see notes).
  3. Serve muffin topped with yoghurt and raspberries stuffed with choc chips.

Notes

The bigger the banana the bigger the muffin you will make. It can take a little longer to cook depending upon your microwave.
