Wonton wrapper(s)

Cherry tomatoes

2 cup(s), halved, (320g)

Red onion

¼ medium, finely diced

Fresh basil

¼ cup(s), leaves, chopped

Reduced fat feta cheese

25 g, crumbled

Balsamic glaze

1 tbs

Instructions

  1. Preheat oven to 180°C. Place wrappers in 15 holes of an 18-hole (1 1/2 tablespoon capacity) mini-muffin silicone mould. Bake for 8-10 minutes, until golden and crisp. Remove from oven to completely cool.
  2. Meanwhile add tomato, onion and basil, to a large mixing bowl, season with salt and pepper, and stir to combine. Spoon mixture into wonton cups, sprinkle over feta into each cup, and drizzle over balsamic glaze. Serve.

Notes

COOK'S TIP: Wonton cups can be made ahead of time and stored in an airtight container until needed.
