Falafels are so versatile! Try them in a wrap or salad, or pack them into your snack box to enjoy with other accompaniments.

Ingredients

Dry chickpeas

1 cup(s), (200g)

Brown onion

1 large, finely chopped

Fresh flat-leaf parsley

½ cup(s), choppped

Fresh coriander

¼ cup(s), chopped

Garlic

2 clove(s)

Ground cayenne pepper

¼ tsp

Cornflour

2 tbs

Baking powder

1 tsp

Oil spray

2 x 3 second spray(s)

Instructions

  1. Place chickpeas in a large bowl. Add enough cold water to cover 5cm above chickpeas. Soak overnight.
  2. Drain chickpeas and transfer to a food processor. Add onion, parsley, coriander, garlic, cayenne and ½ teaspoon salt. Process until finely ground. Sprinkle with cornflour and baking powder and pulse until well combined. Using damp hands, shape mixture into 20 balls (about 1½ tablespoons in each). Mixture will be very moist but will hold together when lightly squeezed.
  3. Preheat air fryer to 180°C. Lightly spray air fryer basket with oil. Arrange 10 falafel in air fryer basket. Lightly spray tops of falafel with oil. Cook for 15 minutes or until browned and crisp. Repeat with remaining falafel. Serve.

Notes

TIP: If you don’t have an air fryer, you can also bake the falafel on a baking paper–lined baking tray in a 200°C preheated oven for 20 to 25 minutes.
