These mini ice cream sandwiches are very versatile. Substitute vanilla, coffee, or hazelnut extracts for the mint, and use any ice cream flavor that you prefer.

Ingredients

Chocolate wafer

Light vanilla ice cream

1½ cup(s)

Mint extract

¼ tsp

Instructions

  1. Crush 4 wafers with a rolling pin or in a plastic bag; place in a small bowl. Add ice cream and mint extract; stir to combine. Spoon 2 tbsp ice cream mixture onto each of 12 wafers; top each with a second wafer. Freeze until ready to serve.
  2. Serving size: 1 sandwich
