Omitting mayo doesn't mean you can't give your sandwich a flavor boost. Slather your favorite light dressing, like the thousand island used here, on your stack. Try green-tomato chutney with grilled cheese, low-fat ranch dressing with chicken, or sugar-free barbecue sauce with last night's leftover pork roast. Other ways to change things up: swap the lettuce for spinach or fresh basil leaves. Try rye our sourdough bread if pumpernickel isn't your thing, or turn to thin-sliced bread for a lighter club sandwich. Don't forget to serve this with a tart dill pickle for a little delicatessen perfection.

Pumpernickel bread

Cooked turkey bacon

2 slice(s)

Deli sliced turkey breast

2 slice(s)

Tomato

½ medium, thinly sliced

Romaine lettuce

¼ cup(s), shredded, or 4 leaves

Instructions

  1. Spread dressing on each slice of bread.
  2. Break bacon to fit on 1 slice and arrange turkey on another. Tope each with tomatoes and lettuce leaves.
  3. Stack sandwich layers and top with third slice of bread. Cut in quarters on a diagonal and skewer with toothpicks.
