This impressive-looking breakfast is satisfying enough to make for guests at a fun Sunday brunch; feel free to scale up the ingredients if you're having a bunch of people over. This recipe gives your favorite breakfast sandwich a fun makeover by serving it on sweet potato toast. Just keep in mind while you're making it, don't spray your cooking spray directly into the toaster. Lightly coat the potatoes away from the heat source.

4 oz, cut into two 1/3-in-thick slices

Table salt

2 large egg(s)

Reduced fat cheddar cheese

3 Tbsp

Cooked turkey bacon

2 slice(s), crumbled

Scallions

2 medium, chopped

Instructions

  1. Spray sweet potato slices lightly with cooking spray; season with salt. Toast on highest setting in toaster or toaster oven 2-3 times, until potatoes are lightly browned and fork tender (flip slices each time for even toasting).
  2. While potatoes are toasting, coat a nonstick skillet with cooking spray; cook eggs sunny-side up.
  3. To serve, top each sweet potato slice with 1 1/2 Tbsp cheddar, 1 slice crumbled bacon, 1 egg and 1 Tbsp scallion; serve immediately.
  4. Serving size: 1 topped toast slice
