Turkey Burgers with Creamy Pesto Spread

We have a secret ingredient that keeps these lean turkey burgers moist: cauliflower rice. The vegetable bits go into the turkey mixture raw and cook inside the meat as the burgers grill. The turkey mixture will likely be very sticky as you work with it; keep your hands slightly damp to keep the mixture from sticking to your skin.

Coat an outdoor grill rack with cooking spray. Preheat the grill to medium-high (about 450°F).

Meanwhile, place the turkey in a large bowl. Add the cheese, basil, salt, and garlic powder; mix with your hands until well combined. Add the cauliflower rice; mix until thoroughly incorporated. Divide the mixture into 8 equal portions, shaping each into a ¾-inch-thick patty.

In a small bowl, whisk together the yogurt and pesto. Arrange the turkey patties on the grill rack. Close the grill lid and grill until cooked through, about 5 minutes per side. Spread 1 tablespoon pesto over the cut side of each top and bottom bun half. Arrange 1 patty on the bottom half of each bun; top with 1 onion slice, 1 tomato slice, 1 lettuce leaf, and top half of the bun.
