Ingredients

Red onion

1 medium, thinly sliced

Turkey breast mince

450 g

Light tasty cheese

4 slice(s), (4 x 21g)

American mustard

2 tbs

Wholemeal hamburger roll

4 individual, (4 x 65g), split, toasted

Butter lettuce

4 g, (4 x leavse)

Tomato(es)

1 medium, cut into 8 slices

Oil spray

1 x 3 second spray(s)

Instructions

  1. Lightly spray a large non-stick frying pan with oil and heat over medium-high heat. Cook onion, stirring, for about 5 minutes or until lightly browned. Transfer to a large plate and loosely cover with foil to keep warm.
  2. Meanwhile, divide mince into 8 equal portions and shape each into a ball. Transfer 4 balls to the hot pan. Using a large spatula, smash each ball into a very thin 10cm round patty. Season the patties with salt and pepper and cook for 2-3 minutes each side, until well browned and cooked through. Transfer to plate with onions. Repeat with the remaining mince, leaving patties in pan. Top the patties in pan with cheese, then top with the reserved patties. Remove from heat.
  3. Spread mustard over cut-sides of rolls. Top bases with lettuce, onion, patty stacks and tomato. Cover with roll tops. Serve.

Notes

TO REFRIGERATE: Mince can be shaped into patties 1 day ahead. Store patties in a reusable container with baking paper between layers for easy separation. Cook just before serving. TO FREEZE: Store patties, as above, for up to 1 month. Thaw overnight in the fridge before cooking.
