Ingredients

Dijon mustard

2 tsp

Baby potatoes, cooked without added fat

4 small, quartered

Olive oil

1 tsp

Red wine vinegar

1 tbs

Mixed salad leaves

2 cup(s), (60g)

Green string beans

150 g, cooked

Boiled egg(s)

1 medium, peeled, quartered (see tip)

Black olives, drained

6 individual, pitted, sliced

Tuna, canned in springwater, drained

1 95g can, laked

Reduced fat feta cheese

20 g, crumbled

Instructions

  1. Combine mustard, oil and vinegar in a large bowl. Add leaves, potatoes, beans, egg, olives and tuna. Gently toss to combine.

Notes

TIP: Cook egg in boiling water for 8 minutes for hard-boiled, or 3-4 minutes for soft boiled.
