Tuna burgers with chilli lime mayo

Who doesn’t love a burger? These ones use affordable canned tuna and are served with a spicy mayo that takes only a minute or so to whip up.

Ingredients

Fresh breadcrumbs

35 g, (made from processing 1 x slice bread in a food processor)

Tuna, canned in springwater, drained

1 425g can

Green shallot(s)

2 individual, finely sliced

Fresh coriander

30 g, roughly chopped

Lime juice

3 tsp

Low-fat mayonnaise

30 g

Egg(s)

1 large, lightly beaten

Vegetable oil

3 tsp

Wholemeal bread roll

4 large, (4 x 60g)

Cos lettuce

8 individual, leaves

Lime juice

1½ tbs

Low-fat mayonnaise

¼ cup(s), (75g)

Light sweet chilli sauce

1½ tbs

Lime zest

2 tbs, (or zest of 1 lime)

Instructions

  1. Combine breadcrumbs, tuna, shallots, coriander and 3 teaspoons lime juice in a medium bowl. Stir in mayonnaise, and enough of the beaten egg to make a sticky, but not wet, mixture. Season with salt and pepper and shape into 4 even-sized burger patties. Set aside in the fridge for 30 minutes.
  2. Meanwhile, to make sweet chilli lime mayo, combine all the ingredients in a small bowl.
  3. Preheat oven to 120°C. Heat oil in a large non-stick frying pan over medium heat. Cook tuna patties, 2 at a time, for 3-4 minutes on each side, until golden. Transfer to a plate and cover with foil to keep warm.
  4. Warm or toast bread rolls, then spread with sweet chilli and lime mayo. Top each roll a burger patty and 2 lettuce leaves each. Serve.
