Ingredients

Olive oil

1 tsp

Turkey breast mince

500 g

Zucchini

1 small, diced

Green shallot(s)

3 individual, thinly sliced

Tandoori paste

1 tbs

No added salt tomato paste

2 tbs

Salt reduced chicken stock

cup(s), (160ml)

Turkish bread

400 g, (buy 4 x 100g) split, toasted

Low fat tzatziki

cup(s), (170g)

Lebanese cucumber

2 medium, cut into ribbons

Carrot(s)

2 medium, cut into long ribbons

Red cabbage

2 cup(s), (170g) shredded

Fresh mint

½ cup(s)

Instructions

  1. Heat oil in a large saucepan over medium-high heat. Cook mince, stirring to break up lumps, for 2–3 minutes or until browned. Add zucchini and shallots and cook, stirring, for 2 minutes or until softened. Add tandoori and tomato pastes and cook, stirring, for 1 minute or until fragrant. Add stock and bring to the boil. Reduce heat and simmer for 3–4 minutes or until stock has reduced.
  2. Spread bread bases with half the tzatziki. Top with cucumber, carrot, mince mixture, cabbage and mint. Top with a dollop of remaining tzatziki. Sandwich with bread tops to serve.

Notes

SERVING SUGGESTION: Mixed salad leaves, drizzled with lemon juice. TIPS: Use a vegetable peeler to cut zucchini and carrot into thin ribbons. Do this while the mince simmers. • You can use korma or tikka curry paste instead of tandoori. • Add it: ½ avocado (sliced) to serve. • Swap it: Turkey mince for lean chicken mince.
