Tofu is versatile as it takes on whatever flavour it is being cooked with. Searing it with sumac and garlic gives the tofu some serious flavour!

Ingredients

Firm tofu

500 g, drained

Garlic

2 clove(s), crushed

Ground sumac

1 tbs

Wholemeal pita bread

160 g, (2 x 80g)

Red capsicum

2 medium, chopped

Tomato(es)

2 medium, chopped

Lebanese cucumber

1 medium, sliced

Red radish

4 large, thinly sliced

Green shallot(s)

2 individual, thinly sliced

Fresh flat-leaf parsley

1 cup(s), torn

Fresh mint

½ cup(s), torn

Olive oil

1 tbs

Lemon juice

2 tbs

Oil spray

1 x 3 second spray(s)

Instructions

  1. Cut tofu into 1cm-thick slices (see tip). Place on a tray lined with paper towel to absorb excess liquid. Rub tofu with garlic and sumac.
  2. Preheat a barbecue or chargrill over medium-high heat. Lightly spray bread and tofu with oil. Cook, turning, for 4–5 minutes or until tofu is light golden and bread is crisp. Cut tofu into strips and break bread into bite-sized pieces.
  3. Combine bread, capsicum, tomatoes, cucumber, radish, shallots, parsley, mint, oil and juice in a bowl. Serve with tofu.

Notes

SERVING SUGGESTION: Steamed broccolini, green beans or broccoli. TIP: Initially cut the tofu into wide pieces so they don’t fall through the grill bars when cooking.
