Sweet and spicy macadamias, pistachios and cashews make an irresistible tasty snack that no one will be able to say no to.

Ingredients

Egg white

1 medium, at room temperature

Caster sugar

2 tbs

Ground cinnamon

½ tsp

Ground ginger

¼ tsp

Raw macadamias

½ cup(s), (70g)

Ground cumin

½ tsp

Chilli powder

¼ tsp, large pinch

Pistachios

½ cup(s), (70g)

Raw cashews

½ cup(s), (75g)

Pretzels

1 cup(s), (40g) mini variety

Instructions

  1. Preheat oven to 160°C. Line a large baking tray with baking paper. Using electric beaters, beat egg white in a medium bowl until soft peaks form. Add sugar gradually, beating well between additions, until sugar is completely dissolved. Transfer half the mixture to a medium bowl.
  2. Stir cinnamon and ginger into one bowl until just combined. Add macadamias and mix until well coated. Stir cumin and chilli into remaining bowl. Add pistachios kernels and cashews. Stir until well coated. Place macadamia mixture on one side of prepared tray. Place pistachio and cashew mixture on other side.
  3. Bake for 30 minutes, stirring every 10 minutes to break up mixture. Set aside for 20 minutes to cool. Add pretzels and toss to combine. Store in airtight containers or sealed bags. Divide the mixture into 8 x ½-cup portions (each portion is 2 serves).
