Get all the flavours of homemade banana bread in a bowl. It's a wonderful treat to make sure that you start your day off right. The steel-cut oats are flavoured with bananas, cinnamon, brown sugar, vanilla and nutmeg. Serve topped with berries and sliced bananas, or any fresh fruit you have on hand. If you have extra time or are enjoying this breakfast on the weekend, spray the berries and banana slices lightly with oil and toss in a frying pan over a medium-high heat until lightly scorched before scattering over the oats.

Ingredients

Steel-cut oats

2 cup(s), (360g)

Skim milk

7½ cup(s)

Banana(s)

4 large, ripened, mashed

Brown sugar

2 tbs

Vanilla bean extract, alcohol free

1 tsp

Ground cinnamon

2 tsp

Ground nutmeg

¼ tsp

Instructions

  1. Place all ingredients and 1 teaspoon salt in 5.5L (22-cup) capacity slow cooker. Stir well to combine. Cover with lid and cook on high for 3-4 hours (or low for 6-7 hours), until oats are thick and tender, stirring halfway through cooking time. Serve oats warm or chilled.

Notes

SERVING SUGGESTION: Caramelised banana slices would work perfectly. Lightly spray a large non-stick frying pan with oil and heat over medium-high heat. Cook banana slices for about 3-4 minutes each side, or until golden and caramelised. Place on top of oats to serve. Steel-cut oats are closer to their whole grain form, which means they take longer to cook, making them perfect for slow-cooking.
