Ingredients

Skim milk

½ cup(s), (125ml)

Egg(s)

1 medium

Dried chilli flakes

¼ tsp

Wholemeal crumpet

4 individual, (4 x 50g)

Reduced-fat ricotta cheese

1 cup(s), (240g)

Smoked salmon

200 g, sliced

Oil spray

1 x 3 second spray(s)

Instructions

  1. Whisk milk, egg and half the chilli in a large shallow dish until combined.Season with salt and pepper. Place crumpets in egg mixture and leave to soak for 10 minutes, turning once, until crumpets have absorbed milk mixture.
  2. Lightly spray a large non-stick frying pan with oil and heat over medium heat.Cook crumpets for 2 minutes each side or until lightly golden and egg has set.
  3. Top with crumbled ricotta, smoked salmon and remaining chilli flakes.

Notes

TIPS: Add baby rocket leaves and lemon wedges to serve. Swap smoked salmon for shaved leg ham.
