Fresh prawns in rich tomato and cheese sauce? Yum! It’s a tasty way to get your seafood fix.

Ingredients

Olive oil

1 tbs

Red onion

1 medium, finely chopped

Dried chilli flakes

¼ tsp

Garlic

3 clove(s), crushed

Canned diced tomatoes

800 g, (2 cans)

Dried oregano

1 tsp

Raw peeled prawns

500 g, peeled, tails intact

Feta cheese

80 g, crumbled

Fresh flat-leaf parsley

¼ cup(s), finely chopped

Fresh oregano

Instructions

  1. Heat the oil in a large saucepan over medium-high heat. Add the onion, chilli and garlic, and cook, stirring, for 5 minutes or until softened.
  2. Add the tomato, dried oregano and ½ cup (125ml) water and bring to the boil. Reduce heat and simmer, uncovered, for 10 minutes or until the sauce thickens.
  3. Add the prawns and cook, uncovered, for 5 minutes or until just cooked through. Sprinkle with feta, parsley and fresh oregano.

Notes

SERVING SUGGESTION: Steamed broccolini, zucchini, and steamed brown rice.
