Ready in just 30 minutes, this pretty Mediterranean-style prawn sauté makes an impressive dinner party dish or a special weeknight dinner to treat the family.

Ingredients

Olive oil

2 tsp

Raw peeled prawns

500 g, King variety, tails intact, (buy 1kg medium shell-on prawns then peel and devein)

Cherry tomatoes

2 cup(s), halved, (320g)

Garlic

2 clove(s), crushed

Dried oregano

½ tsp

Chicken stock

¼ cup(s), (60ml)

Reduced fat feta cheese

60 g, crumbled

Fresh dill

2 tbs, chopped

Instructions

  1. Heat oil in a large frying pan over medium-high heat. Add prawns and season with salt and pepper. Cook, stirring occasionally, for 2 minutes or until prawns start to turn pink.
  2. Add tomatoes, garlic and oregano and cook, stirring occasionally, for 1-2 minutes, until tomatoes soften.
  3. Stir in stock and bring to the boil. Simmer, stirring occasionally, for 2 minutes or until prawns are cooked through. Stir in feta. Remove from heat and stir in dill. Serve immediately.

Notes

FOODIE FACT: Saganaki is a Greek word that refers to any method of preparing a dish in a frying pan. Prawn saganaki is always served with tomatoes and feta, with an optional addition of ouzo - a Greek anise-flavoured liquor.
