Speedy and delicious, this family-friendly one pan pasta will be on the table in just 30 minutes.

Ingredients

Sausage, chicken, raw

200 g, casings removed

Olive oil

1 tsp

Garlic

2 clove(s), crushed

English spinach

1 bunch(es), stems trimmed, leaves coarsely chopped

Dry pasta

200 g, penne variety

Salt reduced chicken stock

3 cup(s), (750ml)

Grated parmesan cheese

2 tbs, finely grated

Dried chilli flakes

¼ tsp, (1 pinch)

Oil spray

1 x 3 second spray(s)

Instructions

  1. Lightly spray a large, deep non-stick frying pan with oil and heat over medium-high heat. Coarsely crumble sausage meat into pan and cook for about 5 minutes, breaking up sausage with a wooden spoon until evenly browned. Transfer sausage to a large bowl and set aside.
  2. Add oil and garlic to pan and cook over medium heat, stirring, for 30 seconds or until fragrant. Add spinach and cook, stirring, until just wilted. Transfer to a bowl and set aside.
  3. Add pasta and stock to same pan and bring to the boil over a high heat. Gently boil, uncovered, stirring occasionally, for 8 minutes. Stir in reserved sausage and cook, stirring, for a further 2 minutes or until pasta is tender and liquid has reduced and thickened to a sauce consistency. Return spinach to pan and stir to combine.
  4. Remove from heat, stir in 1 tablespoon parmesan. Serve sprinkled with chilli flakes and remaining parmesan.

Notes

TIP: To speed up the prep time, replace English spinach with 120g packet baby spinach leaves.
