A great option for an easy and delicious breakfast, creamy overnight oats can be made up to 2 days ahead and stored in the fridge.

Ingredients

Skim milk

cup(s), (80ml)

99% fat-free, plain or natural yoghurt, unsweetened

¼ cup(s), (60g)

Vanilla bean paste

½ tsp

Light peanut butter

1 tsp, crunchy variety

Quick oats

½ cup(s), (45g)

Cocoa powder

2 tsp

Fresh raspberries

¼ cup(s), (35g)

Instructions

  1. Combine milk, yoghurt, vanilla, peanut butter, oats
  2. and cocoa in a medium bowl. Spoon mixture into a
  3. 1¼-cup (310ml) capacity jar, glass or reusable container.
  4. Top with raspberries. Cover and refrigerate overnight.

Notes

TIPS: Store in an airtight container in the fridge for up to 2 days. You can use thawed frozen raspberries instead of fresh raspberries. VARIATION: Swap raspberries for ¼ cup strawberries (sliced).
