Ingredients

Red onion

1 small, half finely chopped and half thinly sliced

Extra lean beef mince, raw

500 g

Egg(s)

1 medium, lightly beaten

Blue vein cheese

50 g, crumbled

Wholemeal sandwich thins

4 thin, (4x40g) toasted

Baby spinach

1 cup(s)

Apple(s)

1 medium, sliced

Oil spray

1 x 3 second spray(s)

Instructions

  1. Combine ½ finely chopped onion, mince and egg in a medium bowl. Add ½ the cheese and gently mix to combine. Shape mixture into four 2cm-thick patties.
  2. Lightly spray a large non-stick frying pan or chargrill with oil and heat over medium heat. Cook patties for 10 minutes, turning occasionally, or until cooked through. Crumble remaining 25g cheese over burgers for the last 2 minutes of cooking. Top sandwich thins with spinach, apple, burger patties and remaining ½ onion, thinly sliced.
