This easy and delicious one pan dessert is quick to prepare on those cold winter nights. The perfect way to end a day, without all the cleaning.

Ingredients

Reduced fat oil spread

30 g

Amaretti biscuits

40 g, hard variety, crumbled

Rolled oats, dry

25 g

Brown sugar

1 tbs

Ground cinnamon

¼ tsp

Peach(es)

5 medium, halved, stones removed, thickly sliced

Vanilla bean

1 whole, halved lengthways

Low-fat custard

cup(s), vanilla, warmed

Instructions

  1. 1 To make crumble, melt half the oil spread in a medium non-stick frying pan over medium-high heat. Add amaretti biscuits, oats, brown sugar and cinnamon. Cook, stirring for 3-4 minutes, until crisp and golden. Transfer crumble to a bowl and set aside.
  2. Melt remaining spread in the same frying pan over medium high heat. Add peach slices, vanilla pod and ⅓ cup (80ml) water and bring to a simmer. Simmer for about 4 minutes, stirring occasionally, until peaches have softened. Scatter crumble over peaches.
  3. Serve with warm custard.

Notes

Amaretti biscuits are available from major supermarkets and specialty grocery stores. You can replace peaches with nectarines, plums or apricots.
