Blueberries are full of antioxidants and give this quick creamy pot of goodness a pop of freshness. You can prepare the oat mix the night before, divide into glasses, cover and refrigerate, then simply top with yoghurt and fruit in the morning to serve.

Ingredients

Rolled oats, dry

½ cup(s), (45g)

Chia seeds

1 tbs, black

Ground LSA seed mix (linseed, sunflower, almond)

1 tbs, (see tip)

Skim milk

½ cup(s), (125ml)

99% fat-free, plain or natural yoghurt, unsweetened

cup(s), (160g)

Passionfruit(s)

2 medium, halved

Fresh blueberries

Instructions

  1. Place oats, chia seeds and LSA in a heat-proof medium bowl. Pour over ⅔ cup (160ml) boiling water and set aside for 5 minutes or until water has absorbed.
  2. Stir in milk and set aside for a further 5 minutes or until milk has absorbed.
  3. Spoon mixture evenly into 2 x 1-cup (250ml) capacity serving glasses. Top evenly with yoghurt, passionfruit pulp and blueberries to serve.

Notes

LSA mix is a mixture of ground linseeds, sunflower seeds and almonds. Find it in the health food section of supermarkets or health food stores.
