Ingredients

Beef topside, raw

100 g

Moroccan seasoning

1 tsp

Frozen corn

cup(s), (55g)

Dressing, Creamy Garlic

1 tbs

Lemon juice

2 tsp

Iceberg lettuce

½ cup(s), shredded, 1 large leaf, trimmed to form a bowl

Cherry tomatoes

100 g, halved

Fresh coriander

¼ cup(s), leaves

Fresh flat-leaf parsley

¼ cup(s), leaves

Canned cannellini beans

cup(s), (80g)

Fresh red chilli

½ whole, thinly sliced

Oil spray

1 x 3 second spray(s)

Instructions

  1. Lightly spray beef fillet with oil and rub with seasoning. Heat a small non-stick frying pan over medium-high heat. Cook beef for 2 minutes each side or until cooked to your liking. Transfer to a plate. Cover beef with foil and set aside to rest for 2–3 minutes before thinly slicing.
  2. Meanwhile, place corn in a heatproof bowl. Pour over enough boiling water to cover. Set aside for 2 minutes or until heated through. Drain.
  3. Combine dressing and lemon juice in a bowl. Fill lettuce leaf with tomatoes, coriander, parsley, cannellini beans, corn and beef. Drizzle with dressing and sprinkle with chilli to serve.
