Hearty soups can take hours to cook, but not this one. Full flavoured and ready in just 30 minutes, it’s guaranteed to leave you feeling warm and content.

Ingredients

Leek

1 whole, sliced

Tomato(es)

2 medium, chopped

Fresh thyme

2 tsp, chopped, plus extra to serve

Celeriac

156 g, chopped, (buy 200g then peel)

Zucchini

1 medium, chopped

Vegetable stock

2 cup(s), (500ml)

Oil spray

1 x 3 second spray(s)

Instructions

  1. Lightly spray a large saucepan with oil and heat over medium-high heat. Add leek, tomato and thyme and cook, stirring, for about 3 minutes or until leek is soft.
  2. Add celeriac, zucchini and stock to pan. Stir to combine and bring to the boil. Reduce heat, cover and simmer for 15 minutes, or until vegetables are soft. Remove from heat.
  3. Using a stick blender, blend soup in pan until smooth. Season with salt and pepper. Ladle into serving bowls. Serve sprinkled with black pepper and extra thyme.

Notes

COOKING TIP: If you don’t have a stick blender, cool soup mixture for 15 minutes, then process in 2 batches in a food processor or blender until smooth. Return soup to saucepan and reheat before serving.
