Koftas and couscous a match made in heaven. Enjoy this Middle Eastern hearty dish with the whole family.

Ingredients

Extra lean beef mince, raw

500 g

Fresh flat-leaf parsley

2 tbs, chopped

Fresh lemon rind

1 tsp, finely grated

Brown onion

1 medium, finely chopped

Red capsicum

1 medium, finely chopped

Zucchini

1 medium, finely chopped

Carrot(s)

1 medium, finely chopped

Tomato passata

700 g

Dry couscous

1 cup(s), (200g) wholemeal

Fresh coriander

½ cup(s)

Oil spray

1 x 3 second spray(s)

Instructions

  1. Combine mince, parsley and rind in a large bowl. Season with salt and pepper. Using slightly wet hands, roll mixture into meatballs. Lightly spray a large non-stick frying pan with oil and heat over medium-high heat. Cook meatballs,turning, for 5 minutes or until cooked through. Transfer to a plate.
  2. Add onion, capsicum, zucchini and carrot, and cook, stirring, for 5 mins or until softened. Add passata and bring to a simmer. Cook for 5 minutes or until sauce thickens. Return meatballs to pan. Remove from heat and season.
  3. Meanwhile, place couscous in a heatproof bowl. Pour over boiling water. Cover and set aside for 5 minutes or until liquid is absorbed. Using a fork, separate the grains.
  4. Spoon couscous among serving plates. Top with meatballs and sauce. Sprinkle with coriander leaves.
