Two opposing flavours come together in this quick and easy Asian-style soup.

Ingredients

Stock powder

2 tsp, vegetable variety

Dried shiitake mushrooms

10 g

Cooked soba noodles

600 g, shelf-fresh variety

Tomato(es)

3 medium, chopped

Celery

1 stick(s), thinly sliced

Green shallot(s)

2 individual, thinly sliced

Fresh coriander

½ cup(s), leaves

Fresh red chilli

1 whole, thinly sliced

Soy sauce

2½ tbs

Vinegar

¼ cup(s), Chinese black variety

Instructions

  1. Place stock powder, mushrooms and 5 cups (1.25L) water in a large saucepan over high heat. Bring to the boil. Set aside for 10 minutes to infuse.
  2. Return stock mixture to the boil over high heat. Add noodles. Reduce heat and simmer, stirring to separate noodles, for 1–2 minutes or until softened. Add tomatoes, celery, shallots, coriander, chilli, soy sauce and vinegar and simmer for 1–2 minutes or until heated through. Serve.

Notes

Chinese black vinegar is available from Asian grocery stores and some supermarkets. If unavailable you can use 2 tablespoons balsamic vinegar and 1 tablespoon rice wine vinegar.
