Add some fresh colour and flavour to your fish tacos with a super simple salsa of tomato, coriander and a dash of chilli sauce.

Ingredients

Flour tortilla(s)

80 g, (2x40g)

White cabbage

80 g, finely shredded

Green shallot(s)

1 individual, sliced

Light whole egg mayonnaise

3 tsp

Lime juice

3 tsp

Tomato(es)

1 large, chopped

Fresh coriander

3 tsp, finely chopped

Chilli sauce

1 tsp, hot

Avocado

¼ large, sliced

Skinless white fish, raw

150 g, firm fillets, cooked, flaked

Instructions

  1. Warm tortillas following packet instructions. Combine cabbage, shallot, mayonnaise and juice in a small bowl. Season with salt and pepper.
  2. Combine tomato, coriander and chilli sauce in a small bowl. Divide cabbage mixture, tomato mixture, avocado and fish between tortillas. Cut in half.

Notes

SERVING SUGGESTION: Serve with lime wedges. TIPS: Steam or bake fish in an oven preheated to 180°C for 10 minutes or until cooked through. Add 1 large carrot (grated) with cabbage in Step 1. Swap fish for 120g cooked peeled prawns.
