This easy creamy mushroom pasta topped with fresh thyme tastes rich but is a healthier version we've created.

Ingredients

Wholemeal pasta, dry

240 g

Olive oil

3 tsp

Eschalot(s)

2 whole, finely chopped

Garlic

2 clove(s), thinly sliced

Mushrooms

600 g, mixed variety, sliced

Fresh thyme

1 tbs, chopped, plus extra to serve

Extra light cream cheese

cup(s), (80g)

Instructions

  1. Cook pasta following packet instructions. Drain.
  2. Meanwhile, heat oil in a large non-stick frying pan over medium heat. Cook eschalot, stirring, for 3-4 minutes or until softened. Add garlic and cook, stirring, for 2 minutes or until fragrant. Add mushrooms and thyme and cook, stirring, for 10 minutes or until mushrooms are golden. Add cream cheese and stir until melted.
  3. Top pasta with mushroom sauce. Serve sprinkled with extra thyme.

Notes

TIPS: Button, oyster, shiitake and enoki mushrooms all work well. Swap cream cheese for low-fat ricotta cheese.
