Ingredients

Olive oil

2 tsp

Raw peeled prawns

500 g, tails intact, peeled

Garlic

2 clove(s), crushed

Fresh lemon rind

2 tsp, finely grated

Green shallot(s)

3 individual, thinly sliced

Salt reduced chicken stock

cup(s), (80ml)

Light cream

80 ml, (⅓ cup)

Baby spinach

100 g

Lemon juice

1 tbs

Fresh basil

2 tbs, baby leaves

Instructions

  1. Heat half the oil in a large non-stick frying pan over high heat. Cook prawns, turning, for 2–3 minutes or until golden. Transfer to a plate.
  2. Heat remaining oil in same pan over medium heat. Cook garlic, rind and shallots, stirring, for 2 minutes or until fragrant. Add stock and cream and bring to the boil. Reduce heat and simmer for 1 minute.
  3. Return prawns to pan with spinach and cook, tossing, for 2 minutes or until spinach has wilted. Stir in juice and sprinkle with basil to serve.

Notes

SERVING SUGGESTION: Steamed snow peas. • Add it: 200g risoni pasta (cooked following packet instructions) to serve. • Swap it: Baby spinach leaves for baby kale leaves.
