Crab meat gives this spicy pasta a delicate sweetness.

Ingredients

Dry pasta

375 g, (dried angel hair)

Olive oil

2 tsp

Garlic

3 clove(s), crushed

Fresh red chilli

2 whole, (birdseye), small, deseeded, thinly sliced

Tomato(es)

2 medium, chopped

Light cream

cup(s)

Crab

350 g

Fresh basil

¼ cup(s), chopped

Lemon(s)

1 medium, wedges to serve

Instructions

  1. Cook pasta in a large saucepan of boiling salted water, following packet instructions, or until just tender. Drain.
  2. Meanwhile, heat oil in a large non-stick frying pan over medium heat. Add garlic, chilli and tomatoes and cook, stirring, for 2 minutes or until softened.
  3. Add cream and bring to the boil. Add crab meat and cook, stirring, for 1–2 minutes or until heated through.
  4. Add pasta and basil to pan and toss to combine. Season with salt and freshly ground black pepper. Serve with lemon wedges.

Notes

SERVING SUGGESTION: Salad of baby rocket, grape tomatoes and cucumber (cut into ribbons), drizzled with 1 tablespoon lemon juice and 2 teaspoons olive oil.TIP: Fresh crab meat is sold at the seafood counter of supermarkets or from your local fishmonger. You can also use frozen crab meat or crab meat canned in brine.
