A minute to stir, then an overnight stay in the fridge takes care of the rest. In the morning, you’ll be greeted by a creamy, filling tropical-flavoured breakfast. The recipe scales up easily, and trust us—you’ll want to make extra. Don’t skip that pinch of salt in sweet recipes! It brings depth to the dish, while punching up the brightness of other ingredients too. Chocolate, oats and coconut, in particular, taste richer with a little sprinkle of salt.

Ingredients

Rolled oats, dry

cup(s), (30g)

Unsweetened coconut milk

½ cup(s), (125ml)

Canned pineapple in natural juice, drained

cup(s), (crushed) (65g)

Honey

1 tsp

Lime rind

¼ tsp, finely grated

Lime juice

½ tsp

Toasted coconut flakes

2 tsp

Instructions

  1. Place oats, coconut milk, pineapple, honey, lime rind and juice and a pinch of salt in a medium jar with a lid or a reusable container. Stir well to combine. Cover and refrigerate overnight.
  2. Sprinkle with coconut flakes, to serve.

Notes

TIP: Purchase unsweetened coconut milk from the long-life milk aisle in supermarkets.
