The garlic, lemon and mint make this broad bean dip simply stunning! This is just what you need when entertaining this festive season.

Ingredients

Frozen broad beans

300 g, shelled

Garlic

1 clove(s), crushed

Green shallot(s)

2 individual, thinly sliced

Soft goat's cheese

60 g

Olive oil

1 tbs

Fresh lemon rind

2 tsp, finely grated

Lemon juice

1 tbs

Fresh mint

1½ tbs, plus extra to serve

Instructions

  1. Boil, steam or microwave broad beans following packet instructions until tender. Drain and shell beans. Refresh under cold water. Drain.
  2. Place beans, garlic, shallots, goat’s cheese, olive oil, lemon rind, lemon juice and mint leaves in a food processor. Process until almost smooth. Season with salt and pepper.
  3. Transfer to a serving bowl. Chill for 1 hour before serving, if time permits. Serve sprinkled with extra small fresh mint leaves.

Notes

TIP: Frozen peas can replace broad beans.
